The ultimate cheesy recipes

Renowned Perth chef Caroline Taylor has joined the Weekend Brunch team to inspire you in the kitchen.

Every Sunday at 11.30am Caroline will whet your appetite and give you the confidence you need to try a new recipe or two.

This week would have marked WA’s Cheese Week so to mark the occaision Caroline brought in a WA cheese pack from Curds and Way, made delicious toasted sandwiches and discussed all things cheese.

Cheese and Caremlised Onion toasitie recipe:

4 Large red onions, sliced finely

½ brown sugar

60ml olive oil

3 Tbspn balsamic onion

Method:

– On a low heat, sweat onions down for until all of the liquids gone and the onion is translucent, you don’t want any colour on the onions.

– Add your sugar and balsamic and keep cooking on a really low heat until the sugars have caramelised and the onions are brown and sticky, usually takes a couple of hours in total.

For the sandwich I’ve spread a thin amount of dijon with sour cream added the caramelised onion and lashings of Appanzelle cheese, microwave for a minute so you don’t have to toast for too long and make sure you butter the outside, absolute perfection.
