Taste of the west – Damien Bell talks Blue Swimmer Crabs

This week on Taste of the West, owner of Bell Boy Seafood, Damien Bell joined Carmen and Michael on weekend breakfast to talk about Blue Swimmer Crabs.

CRAB PASTA

Buy crabs fresh cooked if possible or if you have to cook them make sure they are “on the boil for 10 minutes” (total cooking time may be over 15 minutes depending on how hot the flame is to return pot to boil when crabs are placed in)  in water as salty as sea water, then wash them off and soak to cool in a ice slurry preferably salty water as well otherwise you are flushing out the nice salty taste. Peel out crab meat – mix in with pre cooked linguini pasta with olive oil, fresh chilly, fresh parsley, shaved parmesan, cracked pepper and white wine.  Mix well in pot – serve with an extra sprinkling of parsley and parmesan on top.
