David Torre’s Braised Beef Shank with Hommus, Hazelnut, Date & Orange

  • Veal shnka
  • Onion
  • Ginger
  • Tumeric
  • Garlic
  • Coriander
  • Tomato
  • Cardamon
  • Star Anise
  • Beef stock
  • Orange juice & zest
  • Chickpeas

Hommus

  • Chickpeas
  • Cumin
  • Lemon juice
  • Salt & white pepper
  • Canola Oil
  • Yogurt

COOKING METHOD

  • SEAL SHANKS IN HOT PAN WITH OIL AND CLARIFIED BUTTER.
  • SET THEM ASIDE.
  • IN THE SAME PAN, SAUTE SOME ONION, GARLIC, GINGER AND ORANGE ZEST UNTIL IT STARTS TO COLOUR.
  • ADD SOME DRY SPICE, SOME FRESH CHERRY TOMATOES AND CHICPEAS
  • ADD A GLASS OF FRESHLY SQUEEZED ORANGE JUICE AND LET THIS SIMMER AND REDUCE
  • 500 MLS OF BEEF STOCK THEN PLACE THE BEEF SHANKS INTO A BAKING DISH, COVER WITH THIS WONDERFUL GARNISH.
  • COVER WITH BAKING PAPER AND FOIL AND BAKE IN OVEN FOR 6 HOURS @130 DEGS.
