Fresh Finesse – Banana Pear Bread

Banana Pear Bread

Preparation: 10 min

Cooking: 1 hour 15 min

Serves: 8

2 ½ cups Self raising flour

1/3 cup caster sugar

1 ½ cups desiccated coconut

1 cup chopped pear

3 bananas, mashed

2 eggs, lightly beaten

300 ml milk

60 g butter, melted

1 tbspn cinnamon sugar

Sift flour into a large bowl.  Add sugar and coconut . Stir to combine.  Combine  bananas, eggs, milk and butter in another bowl. Add diced pears.  Fold this mixture into dry ingredients  until mixture is smooth. Pour into a lightly greased loaf tin.  Decorate top with Cinnamon sugar.  Bake for about 1 hour and 15 minutes in 180°C oven, or until skewer inserted in center comes out clean  .Allow to cool for about 10 minutes before turning onto wire rack.
